December 2006: Chrusciki (Angel Wings)
--A special cookie my great grandmother made every Christmas eve. They are best enjoyed the day they are made.
12 egg yolks
¼ cup sugar
2 sticks melted butter
1 cup heavy cream
1 teaspoon vanilla extract
½ teaspoon salt
4-5 cups all purpose flour.
Beat yolks until thick and light in color. Gradually beat in sugar.
Stir in melted butter. Fold in cream. Add vanilla. Add enough flour to
make a soft dough. Chill one hour. Roll out to ¼-inch
thickness. Cut into 3-inch strips. With a knife, make a slit in the
middle of the strip, then pull one end through and twist.
Add enough vegetable oil to come up 1 inch in a large cast iron
skillet. Heat to medium high. Add cookie dough in batches and fry until
lightly golden. Drain on paper towels. Repeat until all dough has been
fried. Sprinkle with powdered sugar while still slightly warm.
